Vegetables with Salsa - Salad Recipe

Vegetables with Salsa:

Remarkable vegetables salsa salad for your healthy dinner!

  • 1 small eggplant
  • 2 zucchini
  • 4 bell peppers (two each of red & green)
  • 1 medium purple onion
  • 1 TBS olive oil
  • 2 tsp. red wine vinegar
  • 1 TBS Parmesan cheese

Salsa Ingredients:

  • 1 onion, finely minced
  • 1 TBS fresh parsley
  • 2 TBS fresh basil, shredded
  • 6 TBS olive oil
  • salt & pepper to taste

Trim the ends off of the eggplant. Cut lengthwise in half, then cut each piece crosswise into about 1/2″ slices. Place in a bowl. Trim the zucchini and cut into 1/2″ slices. Mix in with the eggplant pieces. Half, core, and seed the bell peppers, and then cut each in half lengthwise into three strips. Trim away the white ribs so the strips lay flat, and add to bowl with eggplant and zucchini. Peel the onion and cut it lengthwise into 8 wedges. Add to the bowl, sprinkle with olive oil, salt and pepper, and mix well. On a broiler pan, lay out the vegetables and cook in batches under medium-broil (cooking for about two minutes on each side). They should be slightly charred but not crisp. Transfer cooked vegetables to a large bowl, and pour red wine vinegar over the top. Arrange the vegetables on a large platter.

To make the salsa, place the onions, herbs, olive oil, salt and pepper into a large bowl. Mix well until combined. Cover the bowl and chill in the refrigerator for about one hour. When finished arranging the vegetables on a platter, spoon the salsa over the top and sprinkle with Parmesan cheese. Can be served warm or cold.

    Ramen Veggies:

    1 pkg. (16 oz.) frozen vegetables (any kind!)
    1 pkg. (3 oz.) Ramen noodles

    In a large microwave glass bowl, add the frozen vegetables (mix and match, or use your preference). Break up a Ramen noodle block and stir into the vegetables. Sprinkle the seasoning packet from the noodles over the vegetables and noodles, and stir. Cook the whole mixture according to the package directions found on the vegetables, adding some water before microwaving (add more water if necessary). When finished, the vegetables should be tender and the noodles soft (cook for a minute longer if the noodles still seem hard). Stir to completely mix in the seasoning, and serve hot. Very tasty with a good texture, and very inexpensive to make.
